Vinsanto

Vinsanto, a PDO Santorini dessert wine, is traditionally produced by leaving the grapes dry in the sun for 15 days before they go to the wine-press. This wine variety has an aging capacity of at least 30 years; year after year it transforms into a unique sweet variety, claiming its throne as the ‘king’ of Santorini wines.
The mystery behind its name has people baffled for years: Some believe that it derives from the Italian phrase “vino santo”, meaning “holy wine”, whereas others suggest that it comes from the combination of the Italian word for wine “vino” with “Santo-”, an abbreviation of the word Santorini, thus translating into “wine of Santorini”. Experts still have not concluded in the true origin of its name, but there is an interesting trivia concerning the first theory: in Russia, the biggest market of Vinsanto, it is used in the sacrament of the Holy Communion — “holy wine” indeed!
